Interested in learning more about nutrition, health, and wellness? Tulane University’s registered dietitian is here to answer all your questions! Kelsey specializes in a variety of nutrition-related areas including food allergies, chronic illnesses, and how to build a balanced plate at any location on campus. Kelsey has a Bachelor of Science in Nutrition from Mississippi State University. She completed her dietetic internship and Master of Science in Public Health Nutrition at the University of Tennessee, Knoxville. She was named Louisiana’s Recognized Young Dietitian for 2015-2016, and served as the New Orleans Dietetic Association’s President from 2016-2017.
As Sodexo’s District Campus Dietitian, Kelsey supports 10 schools throughout Louisiana. Kelsey was the first AllerTrain Master Trainer in the state and continuously trains Sodexo staff to provide safe and delicious food for students with special dietary needs. With a passion for food and nutrition, Kelsey believes in empowering people to lead healthy lifestyles through education and access to healthy foods. Are you a vegan or vegetarian? The Vegan & Vegetarian Committee is a group of students that meet with me once a month. This committee discusses vegan and vegetarian options across campus. Meetings are held one Monday a month at 12:00PM or 1:00PM. This committee is voluntary and lunch will be provided at each meeting. If you're interested, click here to apply.
Food Allergies
We take pride in serving you wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements through our online menus. From our general manager to our front line servers, we work carefully to address food allergies, celiac diets, or other special dietary needs. All of our staff members are certified through AllerTrain, an extensive food allergy and gluten-free training program.
We want to meet one-on-one with anyone who has specific dining needs to ensure that your dining experience is safe, delicious, and social. If you have a food allergy/special diet concern, please call or send us a note using the feedback form.
Simplified
Simplified is a resident dining option offered at the Dining Room at the Commons that provides safe and delicious food for customers with food allergies, intolerances, or other special dietary needs. The Simplified station offers freshly prepared proteins, vegetables, and carbohydrates made without milk, wheat, soy, peanuts, tree nuts, shellfish, eggs, or gluten.
Although foods are prepared in a facility that uses these ingredients, we take great measures to protect against the possibility of cross-contact. Separate equipment, utensils, storage areas, and preparation areas minimize this risk, offering customers a safe and healthy dining option.

Mindful is Sodexo's health & wellness approach that helps you make healthy choices second nature! We are committed to creating healthy environments for our customers. Central to this effort is providing healthy, nutritious foods. The result of this initiative is an approach that focuses on transparency of ingredients, delicious food, satisfying portions and clarity in message so that you can make Mindful choices!
Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10% of calories as saturated fat and is restricted in sodium and cholesterol. Look for the Mindful icon to indulge in the healthy and delicious items offered at each meal.
Healthy TU 
The Lavin-Bernick Center is home to our food court. The food court utilizes Tulane University's very own healthy choices meal program, Healthy TU. Healthy TU options are designed to meet healthy diet criteria based on the most-up-to-date guidelines. Healthy TU choices can be identified by the Healthy TU logo at participating food court locations.
